Are we able to customize the Initiative statuses in Lifecycle Manager? I would like to match them to or project board status, IE: Quote Sent, Client Reviewing, Update Needed, etc.

Great question! Right now, Initiative statuses in Lifecycle Manager aren't customizable, they're a fixed set (Suggested, Planned, In Progress, Completed, etc.) designed to align with the strategic roadmap workflow rather than mirror a PSA project board.
